Nutty Granola


Cooking time: 35 minutes

Serving size: approx 15 servings


Oven temperature: 150°C (fan)

 

INGREDIENTS


1 cup porridge oats

1 Tbsp neutral oil (sunflower/rapeseed oil)

1 Tbsp maple syrup

½ tsp vanilla essence

½ tsp cinnamon, or a little more depending on your taste

¼ tsp salt

¼ cup pumpkin seeds, toasted

¼ cup sunflower seeds, toasted

2 Tbsp sesame seeds, toasted

¼ cup flaked almonds, toasted

¼ cup dry shaved coconut, toasted


METHOD


1.) Mix oil and maple syrup in a big glass bowl and heat in microwave. Add vanilla essence, cinnamon and pinch of salt and mix till combined.


2.) Add the oats and stir well until the oats are evenly covered with the mixture.


3.) Bake the oat mixture at 150°C (fan) for 15 minutes. Remove from oven, stir and bake for another 15 minutes at the same temperature.


4.) Whilst the oats are baking, toast the nuts and seeds on a separate tray - watch over them closely as they will take shorter than the oats to toast.


5.) Remove from oven and let mixture cool. You can add any of the additional ingredients or serve them all separately to add to taste.


6.) Store in an airtight container or glass jar for up to three weeks. Serve on top of fruit and yoghurt for breakfast or to add a crunchy element to a dessert.

Tried this recipe twice now - never made granola before - easy and delicious. Also good to play around with ingredients, ie the last time I added some dried fruit.
