INGREDIENTS
2 avocados
100-150g baby plum tomatoes
juice of ½ lime
2 Tbsp chopped coriander
salt and pepper
METHOD
Halve the avocado and remove the pip. Cut a lattice into the avocado and remove the cubes from the skin using a spoon. Repeat for the other avocado.
Roughly mash the avocado with a fork (I prefer more texture in my guac but feel free to mush to a smother consistency if desired).
Finely chop the coriander (including the stalks) and add to the mashed avocado.
Chop the baby plum tomatoes into 0.5cm cubes and add to the mashed avocado.
Squeeze the juice of ½ a lime into the avocado mixture and add salt and pepper to taste.
Combine all the ingredients and enjoy with fajitas, tacos or simply with tortilla chips.
