Caramelised Onion Pasta



Cooking time: 25 minutes


Serving size: Serves 4





 

INGREDIENTS

  • 3 onions (white/brown)

  • 1 cube vegetable stock

  • 250ml water

  • 2 tsp fresh thyme leaves

  • salt and pepper

  • 250g dried pasta (I prefer bucatini or spaghetti)


METHOD


1.) Thinly slice the onions and cook on a low heat in 2 Tbsp neutral oil until soft and beginning to darken in colour.


2.) Make the vegetable stock and set aside.


3.) Add 1/2 tsp salt and the thyme and cook until the onions are dark, soft and caramelised.


Tip: Make sure that you don't cook the onions on too high a heat as you are at risk of drying them out and then they become slightly hard, crunchy and taste burnt. We want to avoid this at all costs!


4.) Allow the onions to cool slightly by spreading them out on a plate.


5.) Put a large saucepan of water on to boil for the pasta. When boiling add 1 tsp salt and add the pasta. Cook according to packet instructions, or slightly under.


6.) Add the cooled onions and the vegetable stock to a blender (or NutriBullet) and blitz until smooth.


7.) Add the blended sauce to a pan and add a splash of pasta water to make it smooth and silky.


8.) Reserve 1 cup pasta water and drain the pasta, then add the pasta to the pan with the onion sauce. Use the pasta water to loosen the sauce. Dish up and enjoy with nutritional yeast or grated parmesan for any cheese lovers.
